Prawn, Avocado and Tomato Salad with Lime and Coriander Vinaigrette
Vinaigrette Ingredients: Mix all together and set aside.
1 tbsp Lime Juice
2 tsp Dijon mustard
2 tbsp olive oil
A few dashes of Tabasco Sauce
1 tsp soy sauce
Salt snd Pepper to taste
Brush prawns with olive oil and smoked paprika and grill for approx. 2 mins on each side until cooked.
Avocado and Tomato Salad:
1/4 cup Coriander
2 large avocados
1 medium ripe tomato
2 Spring Onions (thinly chopped)
Add to vinaigrette and toss until combined.. Spoon into a ramekin and turn onto serving plate. Garnish with cooked prawn and a sprig of dill.
